Food- Fig and Goats Cheese Tart with Thyme and Orange Rind.

Today I fell head over heels in love with Figs . You may think I have been living under a rock but I have never really ever bought figs or cooked with them . This recipe inspired me to do both! This is a gluten free tart with includes an amazing combination of flavours. It goes really well with cream on the side - although not an obvious addition, it works. If you love your gluten then just use a pastry recipe which incudes wheat. See recipe below the photos! 


Fancy Figgy Tart 

Gluten Free Base *

You can use any short crust pastry for this but here is another gluten free option :

3 cups of almond meal

1/2 cup of melted coconut butter

1 tbs rice syrup /honey/maple syrup - you pick! 


150gm goats cheese- I choose Meredith Dairy as its not such a strong taste. 

Honey/ Malt vinegar  - 1-2 tablespoons

1/2 tsp grated orange rind - I use blood oranges because they have more punch. 

3 tsp chopped thyme leaves

2 eggs whisked 

100g almond meal

600gm sliced figs - 6 small figs cut up 

Combine goats cheese, honey, orange rind, thyme leaves and eggs until smooth.  Mix in the almond meal.

Spread goats cheese mix over the prepared almond meal pastry.  Place sliced figs on top. Bake in a moderate oven for 30 minutes or until it smells good. 

Enjoy with organic cream! 

* I was lazy and bought a gluten free short crust pastry base from the frozen section of my local health food store, just do what works for you!
