Food: Pumpkin Bread for a Wintery Saturday

If I told you this was gluten free, dairy free, soy free, and nut free you might be wondering what exactly is in this recipe?

Ingredients

1.5 cups of Gluten free flour  

cinnamon 1/2 teaspoon

ground ginger 1/4 teaspoon

1 teaspoon bicarb soda  

1/2 teaspoon of baking powder  

coconut oil 1/2 cup melted

1 cup pumpkin puree

1/2 cup malt vinegar syrup  

2 eggs

coconut flakes can be added at the end if desired 

1. Pop the oven on about 180 degrees and line a loaf tin with baking paper

2.Combine all dry ingredients and then combine all wet ingredients - mix everything together and scoop into the loaf tin

3. Bake for 30-40 minutes or until it starts to smell really great ! Check on the bread at 25 mins to see how things are tracking.  

4. Invite good friends over to consume with large amounts of butter if desired  

 ** be creative add vanilla bean paste , walnuts , ginger - maybe not all at once but experiment with ideas
