So i was in a very experimental mood today! This is my first (and not final attempt) to make a dairy free cheesecake - seems crazy right? Well it can be done with a bit of patience and a great deal of optimism! I can't say that I got it right the first time but I know when I make it again I will be able to tweak it a little bit.
Shredded coconut 1/2 cup
Dates x 4 - I found some dates covered in coconut and these worked well!
flax seeds ground into meal 3/4 cup
1 tablespoon of coconut oil or olive oil spread
Mix together in a food processor and press down on the base of your cake pan
Avocado x 4
Coconut oil -1 tablespoon
Sweetener - honey , agave or rice malt syrup 1/2 cup
1/2 cup lime juice
Zest of 1 lime
Mix in a blender / food processor until silky smooth
pour over base and place in freezer for minimum 3 hours
Serve chilled and consume cold.
Verdict: Well Its not really cheese cake but it is an amazing treat in it's own right The fact that it is also thrown together in under 30 minutes without an oven makes this one a keeper.
